Executive Chef, Mr. Izumi
Italian cuisine is often prepared with olive oil, so I believe we have adapted it successfully for vegan and Muslim diners without compromising the natural flavor of the ingredients.
love and eel [Muslim-friendly]
This specialty eel restaurant is also popular among international tourists. It has been awarded halal certification from the mosque in Itoshima, so Muslim guests can dine with peace of mind.
Thorough precautions are taken, including using dedicated cooking utensils and ensuring that no pork-derived ingredients are kept in the restaurant.
The restaurant uses Japanese-grown rice, carefully selected by the owner, who is also a sushi chef. It is cooked in small batches using a Nambu ironware pot.
For each order, carefully selected eel from Kagoshima Prefecture and other regions is grilled over charcoal with the homemade sauce, made without pork or alcohol. The unadon (rice bowls topped with eel) are served with soup and fish bone crackers.
