At Sushi Shima, you can try out a ramen dish made only from plant-based ingredients, which is a reproduction of the famous Fukuoka dish tonkotsu ramen (noodles cooked in pork bone broth).

The vegan lunch set includes ramen noodles, vegetable hosomaki (thin sushi rolls), inari (sushi rice encased in a deep-fried tofu pouch), two seasonal side dishes, and a dessert.

The dashi (stock) is made with great care over time from makombu (Japanese kelp) from Hokkaido and dried shiitake mushrooms from Oita. It is combined with soy milk to produce a refined flavor. This well-calculated bowl retains the depth and umami of tonkotsu (pork bone broth), and incorporates traditional Kyushu somen (thin noodles) that pick up the soup well. Even vegans will be satisfied with these noodles, so do give it a try.


The proprietress has lived abroad and is proficient in English, and the restaurant welcomes many foreign customers.

When you first bite into it, you will be surprised by its crispy texture! The chickpea patties are baked until crispy to recreate the texture of real meat. It is sandwiched between fluffy buns, and you can choose your own sauce and toppings. The salad served alongside the burger is also a star dish in its own right that comes with a different dressing for each vegetable. You can satisfy your heart and stomach without feeling guilty.

Here, we will feature a vegan kaiseki (traditional Japanese multi-course meal) that does not use any ingredients derived from animals.

The course starts with yuba tofu otsukuri (a vegan "sashimi" platter). The dishes are served one at a time, and include a Chinese-style salad of yuba and avocado, which is characterized by its crispy texture, and yudofu (boiled tofu) in a broth made with tororo kombu (shredded kelp).

The tofu, prepared in front of the diner, can be enjoyed simply with salt, but we also recommend trying the mabo-an (tofu with a spicy meat sauce) made with soy meat! You can also enjoy decorative vegetable tempura with curry salt, or yuba tofu kabayaki (grilled tofu skin) with a sweet and salty soy sauce-based sauce. The depth of soybeans comes through in the creative appearance and flavors of each dish.
