In order to make the okonomiyaki crispy and light, we developed a special okonomiyaki batter with a flour maker. A thick griddle about 1 cm thick that does not drop in temperature from the moment the dough is spread out to the moment it is finished, so that it contains plenty of air and is fluffy.
