Mizutaki

水炊き

Thick slices of boned chicken meat are cooked with seasonal vegetables and then eaten with ponzu sauce.
This dish was invented in Fukuoka City in the 1890s, where it became a favorite dish of the professors and students of Kyushu University Medical school . When they returned to their hometown - most of them were from prestigious high schools in the Kanto and Kansai regions - they would advertise it as a ”Fukuoka Specialty”. It spread throughout the country as a result.
