At Houraku, we are particular about every aspect of our motsu nabe (hot pot): the ingredients, the vegetables, and the broth.
Freshness is the key to the ingredients used for motsu nabe. In order to avoid any unpleasant tastes or smells, we are very particular about the freshness of all the ingredients.
Not only the beef, but also the soup, vegetables, tofu, and noodles. We are particular about the freshness of everything.

Beef intestines are made mainly from small intestines of Japanese Wagyu beef, with a small amount of carefully selected striped intestines mixed in. The soup stock base is a combination of beef tail and beef tongue, carefully simmered for 6 hours. The base beef broth is seasoned with our original Kaeshi Miso. The soup is rich and deep, and the flavor of the beef and vegetables is soaked up.
