Founded in 1878, Tamamizu Sake Brewery is the only sake brewery in Takata Town.

Now led by fourth-generation representative Hiroaki Yamashita, the brewery is well known in Fukuoka for carefully preserving traditional tools and brewing methods despite its small size.

Its standard sake “Tamamizu Josen” is popular for warming, while the “Daiginjo” is a premium sake made luxuriously by polishing away more than half of the rice. “Shinriki” is a distinctive, crisp sake brewed using the rare Shinriki rice variety—once widely cultivated from the Taisho to Showa periods. Tamamizu works with local contract farmers to grow this rice. Polished to 50% and brewed using ginjo methods, this junmai sake offers a refined texture and rich rice flavor.

The brewery’s Narazuke pickles have also become popular in recent years. Freshly harvested gourds are repeatedly pickled in the brewery’s own high-quality sake lees and finished in ginjo lees, creating a premium additive-free product often chosen as seasonal gifts.
