FRANCEYA

FRANCEYA

Regional gastronomy French cuisine with a focus on fish

1962-68 Katsutoshi Funakoshi, the first generation, trained at Georges Cinq in France.
Established in Yokohama in 1975
Relocated to Munakata in 2010.
Currently run by the second generation, manager Rie Takao (sister) and chef Seigen Funakoshi (brother).
The current chef's wish is to “create French cuisine that is adapted to the land, incorporating SDGs (local production for local consumption). Depending on the type of local fish, the chef chooses the best cooking method, such as smoked, meuniere, poiret, or soup, to ensure that the fish is enjoyed at its best. The fish is purchased from the nearby Kanezaki
Fishing Port, one of Fukuoka's leading fishing ports. Ingredients are selected to bring out the “flavors of the land. Enjoy the sommelier-selected wines that go well with the dishes.
