A delicious and rare delicacy made with kinugai clams (himegai), sometimes called the ’King of Delicacies.’ The Buzen Sea used to be a treasurehouse of kinugai, torigai (Japanese egg cockle), and akagai (blood clams). Nowadays they are far less common, but the processing technique is famous throughout Japan, and dried kinu clams go perfectly with sake.
When lightly heated, the aroma and rich flavor of these clams makes for an unforgettable dish! Heat these clams lightly over a fire and enjoy eating them.
